Only 3 weeks until the Racing for Pinks 5k (Click HERE for info). I'm soooo glad I signed up for it!! I had completely stopped running and was only doing the elliptical at the gym. It's giving my lazy butt a reason to get outside and run. The hubs even said he would "train" with me...yay!!  BUT I wouldn't survive without an upbeat playlist so thought that I would share...

SKINNY Spinach Dip & Broccoli Casserole

I just died y'all. This skinny spinach dip is so freakin good...and easy!! I'm taking it to the Georgia Southern Game today so I'll have something yummy to turn to. But I'm not gonna lie, tailgates are so hard!! There is way too much good food just sitting around staring at you for hours. 

Skinny Spinach Dip 

Ingredients: 
-2 packs frozen chopped spinach 
-1/2 cup light or fat free mayo 
-1 cup light or fat free sour cream 
-1 package Knorr vegetable recipe mix (soup isle)
-1/2 yellow onion minced
-3 tablespoons water chesnuts minced
-Bread bowl 
-Reduced fat Ritz crackers, carrots and/or celery for dipping 

Instructions: 
Place frozen spinach in colander and run warm water over it until thawed. Squeeze, squeeze and squeeze spinach until all water is out. In a mixing bowl combine spinach and all ingredients listed above. Mix well, chill and serve. That's it...really!! And it's even better the next day. 
 Fat free mayo has a funny taste to
me so I used  Duke's light mayo.

really good and you can have 5
crackers for 70 calories. Not bad!

What had happened was...
I knocked over my fancy toothbrush 
holder in the bathroom. Went to catch 
it and banged my head on the 
cabinet above the toilet.
Broccoli Casserole 

Ingredients:
-1stick butter (half for sauce, half for topping)
-1 regular size block Velveeta
-1/4 cup all purpose flour 
-2 cups milk 
-1 bag Green Giant Steamers broccoli  
-3 cups cooked rice 
-1 sleeve Ritz crackers 

Instructions:
Pour cooked rice in 9x13 casserole dish. Cook broccoli according to package instructions and let cool. Melt 1/2 stick butter in saucepan. Add in 2 cups milk and chunks of Velveeta. Whisk together on medium heat. When melted, add in flour and cook for 5 minutes on medium heat. Mix broccoli and cheese sauce with rice. Chop big pieces of broccoli with fork while stirring. Melt 1/2 stick butter, crush 1/2 sleeve Ritz crackers and mix with butter. Sprinkle as topping. Bake on 350 for 10 minutes. Enjoy!   
Make sure rice is COLD or the
casserole will be mushy
I used to boil my broccoli...
so glad I finally realized this was easier 
Whole milk and real butter work best...of course!! 
Stir, stir, stir so it doesn't scorch

Weigh In Wednesday: Losing versus Maintaining


The first time I lost weight I did weight watchers and it really worked. You can read my story by clicking HERE. My only problem was that I didn't know the difference in maintaining and losing. I had one mode...WEIGHT LOSS MODE. If I wasn't on the plan, I would eat like Larry the cable guy at a buffet. AND I felt like if I didn’t count every point that went in my mouth I was cheating. I lost 110 pounds but I never made it to my goal weight, so I never truly learned how to maintain. Now don’t get me wrong, I love weight watchers and it truly taught me how to eat but these days I'm enjoying counting calories. To me it’s easier and if there are days I'm too busy, I just try and watch what I eat. So far it's working!


This morning when I weighed in I had lost 1.2 pounds for a total of 28.8 gone. I'm only 1.2 pounds away from hitting 30 pounds. I'm starting to see the light at the end of the tunnel. For me, when I am under 200 pounds I know exactly what size I wear when I'm in the 190's, 180's, 170's etc. That excites me!! And gives me a reason to keep going. I have several dresses, some with the tags still on, that I can’t wait to wear.

the gym after a 5:30 AM workout.

Right now I have to remind myself that I won’t always have to lose weight. That one day I will be able to maintain. I also have to remind myself that when I get tired, and need a break, it’s okay to maintain for a couple days. When I first started this journey I knew if I put my all into it I would be able to lose weight. I’ve done it before. In the back of my mind though, I wondered how long I would be able to keep it off. I wondered what people would think about someone trying to lose weight for the second time. Y’all, I’m not perfect but this time I feel like I’ve made more progress losing 30 pounds than 110. I want to fit into THE DRESS again and stay in it!!

Tasty Tuesday-Crock Pot Roast

I love my mama's pot roast. It's so good and she makes the best gravy. She cooks her roast in the oven on low heat for hours then adds in her potatoes and carrots The meat just falls apart because it's so tender. I had a craving for it and made a crockpot version last week.


Mama's "Can Be Skinny" Crock Pot Roast

Roast/Gravy Ingredients:
-2 to 3 pound chuck roast
-1/2 cup all purpose flour
-3 cups water
-Salt and pepper
-1 yellow onion


Instructions:
1. Generously salt/pepper roast and place in crock pot.
2. Pour two cups water in with roast.
3. Slice onion into rounds and place on top of roast. Cook on low for 12 hours or high for 6 hours.
4. Take roast out and place on plate. Mix flour with 1 cup water in a separate bowl. Slowly whisk mixture in with juices left in crockpot. 

5. Place roast back in crockpot gravy mixture and let cook for 30 minutes on high. 

I LOVE dinner already being
done when I get home.
My roast cooked on low from 6AM-6PM. 
Root vegetables: 
1 bag baby carrots, 2 pounds red potatoes, 
Zero calorie spray butter (take top off and pour), 
Mrs. Dash garlic and herb seasoning 
Toss in spray butter, spread in pan
and sprinkle with seasonings. Bake 

uncovered on 425 for 25 minutes. 
To save on calories...
instead of placing all of the roast back in
the gravy save some out AND make mashed
cauliflower instead of white rice.

My thought is this...

I'm still going to make normal meals for my family. I'm just going to learn how to eat the right way. That's the only way that my weight loss will last. I can eat roast. I can eat rice. And I can even eat gravy. It's all about PORTION CONTROL and making SMART CHOICES!!

Lake Weekend Recap

This morning I met Sarah at the gym at 5:30 AM. You would think getting up that early would make me tired but it actually does the opposite. I feel better today than I have in weeks. AND when I get up this early I go to bed at a descent hour. I ENJOY my workout sessions early in the morning. It starts my day out right and it’s my “get the stress out” time. We did 35 minutes on the elliptical and 10 minutes on the treadmill then took showers at the gym. I forgot to bring a stinkin towel but Sarah came to the rescue right before I was about to dry my body with paper towels!! Can you imagine a big, wet, naked body with paper towels stuck all over? Ha! We got a good laugh out of it.

*Bread and butter pickles sweetened
with splenda-ZERO Calories
*Mini bagels-120 Calories
*Mesquite turkey-50 calories for 2 oz. 
Today's breakfast and lunch-
*1/2 bagel with reduced fat strawberry
cream cheese and grapes (100 calories)
*1/2 sandwich on 40 cal bread with turkey
and garden vegetable cream cheese,
bread and butter pickles (110 calories)
Saving up for something YUMMY tonight :o) 
Rewind to Friday night…
We decided to leave Saturday morning for Milledgeville. I was exhausted from being on the cheese wagon for five hours and we had to drive separately so Chris could be in ATL Monday morning for a work conference. BUT, we got there in plenty of time Saturday morning and Chris’s 30th birthday weekend on Lake Sinclair was a blast! All of our best buddies came down. We swam, rode the pontoon boat around the lake and grilled out. It was so much fun and I was sad for it to end. Y’all I’ve tried the cute little Pinterest parties but this was by far the easiest and most fun party I’ve ever thrown for Chris. I rented the boat, packed sandwiches/drinks and Chris’s parents grilled for us. Guys do NOT care about cute little decorations. I will definitely be doing this again!!

Throwback Birthday

Happy birthday to my Christopher. Today he is the big THREE O!! For his birthday we are heading to Milledgeville Friday night for a fun Saturday on Lake Sinclair with friends. I rented a pontoon boat and afterwards we are going to grill out. I think it's going to be lots of fun and everyone will have a good time. We used to go to the lake all the time when we lived in Greensboro. It's one of Chris's favorite places to be. So, I'm petty sure this will be the PERFECT 30th birthday spot.

This morning I left Chris a little birthday gift on the counter and kissed him goodbye while he was still sleeping. I feel bad having to leave him on his birthday but I guess that's what happens when you become a grown up. Sigh. In about an hour I'll be on a school bus headed to Covington. I've already gotten my pillow pet packed and my motion sickness patch behind my ear. I'm ready to ride!

Weigh In Wednesday & 5K Info

The past seven days have been total topsy turvy in the Jacobs house. Last week we were moving furniture after work each night and going to bed at one o'clock in the morning. My body does not function on that amount of sleep. I've felt like a walking zombie for days but then when I lay down I'm wide awake. Go figure! And to top it off, last week I was so busy that I bailed on Sarah. I didn't go to the gym once. I NEED some exercise!! I told y'all I have an A type personality like nobody's business so working out calms me down. I feel my stress level rising with all of the upcoming events and deadlines on my plate. Working out is my Xanax and I REALLY need a refill.

When I weighed in this morning I hadn't lost a single ounce. It's completely my fault though. I've been eating pure crap. I didn't buy groceries to keep from having to lug them to the new place. I said, "Well eating poorly this weekend won't hurt." BUT I didn't stop!! Sunday night my parents had a fish fry after church and I ate until I felt sick. Then Monday my family came over to see our new house and I made dinner. I ate two huge plates!! THEN Tuesday was Mama's birthday and Daddy grilled. I could have eaten a fat free hot dog and salad. I
didn't!! I ate a whopping big A hambuger and a hunk of Dairy Queen ice cream cake. Ugh!!

I said all that to say this...
After eating and not exercising this past week I feel gross and tired! I'm exhausted and my bad habits are slowly starting to creep back up. I'VE GOT TO STOP!! This CANNOT go on any longer. It's time to get back with the program. This is how it starts y'all! Oh I'll just have this tonight and do better in the morning. Then morning comes and oh I'll do better tomorrow. Then tomorrow turns into next week. I know the cycle. I've done it too many times!! Yes, I'm about to go out of town for four days but I'm not waiting to get back with it when I return. It starts this very moment.

That's why this morning I signed up for the Racing for Pinks 5k on October 19. I need something to work towards. Something to get me off my lazy butt. Thursday morning I am leaving for a two day school field trip/competition and getting back Friday night. Then I'll unpack, repack and we will be headed to Milledgeville for Chris's birthday weekend. I'm excited and I know both trips will be fun but I'm ready to get back to the norm. Until then I'm going to do the best I can to get back on track. This happens to everyone guys!! BUT if you survive it...
